This is my american-leaning version, built around the ingredients and method that give the recipe its character.

Fun Fact

Aroma changes how strongly we perceive flavour, which is why herbs, citrus peel and warm spices can make a simple recipe taste far more complicated than the effort involved.

Ingredients

  • 2 tbsp olive oil
  • 1 turkey neck
  • 3 shallots, diced
  • 1 small apple, diced
  • 2 cloves garlic
  • ⅓ cup bourbon
  • ⅔ cup apple cider
  • 2 cups chicken stock
  • 3½ tbsp all-purpose flour

Steps

  1. Cook shallots and apple in olive oil until soft. Add garlic and turkey neck and brown well.
  2. Pour in bourbon and cook until mostly evaporated. Add cider and bring to a simmer.
  3. Shake cold stock and flour together until smooth.
  4. Remove the turkey neck and slowly whisk the stock mixture into the pan. Cook 10–15 minutes, whisking, until thick.

Notes

The bourbon is cooked down for flavour, but cooking does not guarantee every trace of alcohol disappears. If that matters for your household, use extra cider instead.

Substitutions

Storage

Store in a clean airtight container in the refrigerator. Use a clean spoon each time because introducing mystery crumbs is how condiments develop side quests.

Freezing

Most dry seasonings do not need freezing. For wet sauces, freeze in small portions only if the ingredients tolerate it; creamy emulsions may separate after thawing.
