East Coast Lobster
This is a rich chowder packed with plenty of lobster. Serve in small cups for a very special course or in larger bowls as the centerpiece of an informal supper.
Ingredients
- 1-2/3 cups red potatoes, diced and cooked
- 2 tbsp salted butter
- 1-1/2 cups red onion, minced
- 1 tbsp dried thyme leaves
- 1 tsp celery salt
- 1/4 tsp white pepper
- 1 tbsp lemon juice
- 3/4 cup heavy cream
- 1/4 cup sour cream
- 1 cup 3% whole milk
- 2 to 3 cups Nova Scotia lobster meat
- 1 cup dried shrimp
- 1 celery stalk, sliced and diced
- 1 tsp minced garlic
Steps
- In a large saucepan over medium heat, sauté onions and garlic in butter until soft and transparent — do not overcook.
- Cook potatoes until soft but not completely cooked.
- Add the thyme, celery salt, and pepper, then the cooked potatoes.
- In a bowl, blend the sour cream, heavy cream, milk, lobster meat, dried shrimp, celery, and lemon juice.
- Add to the potato mixture and stir gently. Simmer on low-medium, but do not boil.
- Garnish with leftover lobster meat, green onions, and basil or lemon zest.

Substitutions
