Fresca Ensalada del Taco
Romaine, seasoned chicken, beans, salsa, cheese, yogurt and crushed tortilla chips tossed into one gloriously practical taco salad. The old recipe intro mentioned ground beef while the actual ingredient list and directions used chicken. I have sided with the recipe itself because dinner should not require forensic accounting.

Ingredients
- 2 heads romaine lettuce
- 2 chicken breasts
- 1 cup beans
- 1 cup salsa
- ½ cup shredded cheese
- ½ cup plain yogurt
- 2 cups tortilla chips, crushed
- Oil, as needed for cooking
Steps
- Heat a frying pan over medium heat and add a small amount of oil.
- Add the chopped chicken and cook until safely cooked through and no pink remains. Do not overcook.
- Wash and chop the romaine into roughly 1-inch pieces and place in a large bowl.
- Add the cooked chicken, beans, salsa, shredded cheese and yogurt.
- Add the crushed tortilla chips just before serving and toss thoroughly. Serve immediately.

Substitutions

Storage
