Origin
Remoulade began as a French sauce, but Louisiana developed its own bold versions, often with mustard, paprika, hot sauce and Creole or Cajun flavours.

Louisiana remoulade is less a single immutable formula and more a family argument conducted with mayonnaise, mustard and paprika.
Ingredients
- 1 cup light mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 tbsp chopped parsley
- 1 tbsp Louisiana-style hot sauce
- 2 tsp whole-grain mustard
- 2 cloves garlic
- 2 tsp crushed capers
- 1 tsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 scallion, finely chopped
- ½ tsp sea salt
- ¾ tsp cayenne pepper
Steps
- Mix all ingredients together until evenly combined.
- Cover and refrigerate for at least 1 hour so the flavours can stop shouting separately and start shouting together.
- Stir before serving.
Notes
Excellent with shrimp, crab cakes, fries, sandwiches and anything else sitting on the plate looking underseasoned and nervous.
Substitutions
Regular mayonnaise works whether full-fat or light. Whole grain mustard can replace Dijon for more texture. Any hot sauce you already like can stand in for a Louisiana-style brand specifically.
Storage
Keep refrigerated in a clean sealed jar and use within about 5–7 days.
Freezing
Do not freeze. Mayo-based sauces thaw with the emotional stability of a reality-show reunion.
