Pizza Salupa
Soups, stews, and chowders can come in many forms โ but we thought, "why not make a pizza into a soup?"
Ingredients
- 1 tbsp avocado oil
- 1 large red onion, finely chopped
- 1 red pepper, finely chopped
- 8 oz sliced portabello mushrooms, diced
- 2 cloves garlic, minced
- 2 tbsp herb and garlic tomato paste
- 1 cup sliced pepperoni (or bacon crumble)
- 1 tbsp oregano
- 1 tbsp basil strips
- 3 1/2 cups crushed tomatoes
- 3 cups low-sodium vegetable broth
- 1/2 cup heavy cream
- 1 crusty baguette, cut into pieces
- 1 to 2 cups shredded mozzarella
- Pineapple, chopped (optional)
Steps
- In an oven-proof Dutch oven or soup pot over medium heat, heat oil. Add onions and peppers, season with salt, and cook until slightly tender and golden, about 3 minutes. Add mushrooms and cook until browned. Add garlic and tomato paste, cook until aromatic. Add the meat and stir to combine.
- Add seasonings, basil, crushed tomatoes, and broth. Bring to a simmer for 10 minutes.
- Remove from heat and stir in heavy cream. Heat the oven broiler. Top the pot with bread and sprinkle with mozzarella. Place remaining meats and seasonings on top and carefully transfer to the oven until the cheese is slightly melted and golden.
