Rhubarb Lemonade

The cookbook version really does pair 2 stalks rhubarb with 1½ cups berry sugar. That combination comes straight from the original recipe, not from a late-night refrigerator séance.
Ingredients
- 2 stalks rhubarb
- 1½ cups berry sugar
- 5 cups water
- 1½ lb strawberries
- 1 cup lemon juice
Steps
- Bring rhubarb, sugar and water to a boil.
- Remove from heat, stir in strawberries and let steep and cool for 30 minutes.
- Strain through a fine sieve and discard the solids.
- Chill the liquid, then stir in lemon juice.
- Serve over ice.
Notes
Taste near the end and adjust. Salt, acid and heat are much easier to add than remove, despite what some of my more enthusiastic recipes occasionally imply.
Substitutions
