Simple Cucumber Tomato Salad
Cucumbers, cherry tomatoes and onion in a sweet-tangy apple-cider-vinegar dressing. It is the kind of salad that shows up beside grilled chicken, fish, burgers, sandwiches or whatever else escaped the barbecue alive.

This is a quick marinated cucumber, tomato and onion salad dressed with apple cider vinegar, olive oil, sugar, salt and pepper.
Origin
Cucumber-and-tomato salads appear in many cuisines across Europe, the Mediterranean, the Middle East and North America. This particular vinegar-dressed version is a Dinner by the Minute recipe rather than a dish with one documented birthplace.

Ingredients
- 2 large cucumbers, sliced
- 2 cups cherry tomatoes
- 1 medium onion, diced
- 1 cup water
- ½ cup apple cider vinegar
- ¼ cup olive oil
- 2 tsp salt
- 3 tbsp sugar
- ½ tbsp black pepper
Steps
- Combine sliced cucumbers, cherry tomatoes and diced onion in a large bowl.
- Whisk water, apple cider vinegar, olive oil, sugar, salt and black pepper until the sugar dissolves.
- Pour the dressing over the vegetables and toss well.
- Chill before serving if desired.

Substitutions
Add avocado, garlic, chilies, lemon zest or orange zest. Replace apple cider vinegar with white wine vinegar for a lighter flavour. Reduce the sugar if you prefer a sharper salad.

Freezing
Do not freeze. Cucumbers and tomatoes become mushy after thawing.
