The Cornwall
A simple, yet tasty soup using the leftover ham bone and ham chunks. This recipe from Southwest England is a must-have for those on a rainy day, and is perfect to serve on St. Patrick's Day.
Ingredients
- 1 tbsp olive oil
- 2 carrots, finely chopped
- 1 small leek, white only, thinly sliced
- 1 celeriac bulb, peeled and finely chopped
- 4 to 5 cloves garlic, crushed
- 200 g red lentils
- 1/2 tsp grated nutmeg
- 1.5 lbs ham hock
- 8 cups chicken or vegetable stock
- 2 tbsp parsley, finely chopped, for the pesto
- 1 tbsp mint, finely chopped, for the pesto
- 1 cup parmesan, grated, for the pesto
- 2 tbsp extra-virgin olive oil, for the pesto
Steps
- Heat oil in a large stockpot, add carrot, leek, celeriac, and garlic, and cook over medium-low heat, stirring, for 3 to 4 minutes until softened. Add lentils and cook, stirring, for 30 seconds, then stir in nutmeg. Add the hock and stock, bring to the boil, then reduce heat to low. Cover and simmer for 2 hours.
- Meanwhile, make the pesto: pound the parsley, mint, parmesan, and olive oil together (or use a small food processor) until it forms a paste. Season with pepper.
- Remove the hock from the soup, discard the skin and fat, and cut the meat into small, bite-sized pieces. To serve, pour soup into bowls, add ham pieces, and drizzle with pesto.
- Serve with crusty bread.
