Origin

Meatloaf-style dishes have shown up in some form across nearly every culinary tradition that grinds meat and needs to stretch it further. This one just leans considerably harder into volume than most.

Fun Fact

Meatloaf-style dishes go back to at least ancient Rome — the cookbook Apicius includes a version bound with bread and wine. This one skips the wine and goes straight for volume.

Ingredients

  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 yellow onion
  • 1½ lb ground beef, lamb, chicken or pork
  • 4 tbsp heavy cream
  • ½ cup shredded cheese
  • 1 egg
  • 1 tbsp dried basil
  • 1 tsp sea salt
  • ½ tsp ground black pepper
  • 10 to 12 slices bacon
  • 1¼ cups heavy whipping cream, for gravy
  • ½ tbsp tamari soy sauce, optional

Steps

  1. Preheat the oven to 400°F.
  2. Fry the onion until soft but not browned. What is Keto? The ketogenic diet is a low carb, moderate protein, and high fat diet which puts the body into a metabolic state known as ketosis. When you're body is in a state of ketosis, the liver produces ketones which become the main energy source for the body. Keto completely reverses how your body functions and in a good way.
  3. Mix the ground meat in a bowl. Add all other ingredients, except the bacon. Mix well, but avoid overworking it because this can make the end result too dense.
  4. Form into a loaf and place in a baking dish. Wrap the loaf in bacon.
  5. Bake in the middle of the oven for about 45 minutes. If the bacon begins to overcook before the meat is done, cover with aluminum foil and lower the heat a bit.
  6. Save the juices that have accumulated in the baking dish, and use to make the gravy. Mix the juices and the cream in a smaller sauce pan.
  7. Bring to a boil and lower the heat and let simmer for 10–15 minutes until it has the right consistency. If you want, use a little tamari soy sauce to taste. Serve with freshly boiled broccoli or cauliflower with butter,
