Ingredients
- 4 tbsp avocado oil
- 2 cups chopped leeks
- 2 tbsp minced garlic
- ¼ tsp salt
- 2 cups carrots, peeled and sliced
- 1 cup lima beans
- 1 cup cauliflower florets
- 2 cups fresh green beans
- 8 cups vegetable broth
- 4 cups chopped tomatoes
- 2 cups corn kernels
- ½ tsp black pepper
- 2–3 fresh basil leaves
- ¼ cup chopped parsley
- 2 tsp lemon juice
Steps
- Heat avocado oil in a large stockpot over medium heat.
- Add leeks, garlic and salt and cook until they begin to soften.
- Add carrots, lima beans, cauliflower and green beans. Cook about 5 minutes, stirring occasionally.
- Increase heat and add vegetable broth. Bring to a simmer.
- Add tomatoes, corn and pepper. Reduce heat, cover and cook about 30 minutes, until vegetables are tender.
- Remove from heat and blend to your preferred consistency.
- Stir in parsley, basil and lemon juice.
- Serve with grated Parmesan if desired.
