Ingredients

  • 1 lb ground pork
  • 2 tsp soy sauce (or tamari)
  • 2 tsp chives, finely chopped
  • 2 tsp rice wine vinegar
  • 1 tsp cornstarch
  • 2 tsp ginger, grated
  • 1 tbsp garlic, minced
  • 1/2 tsp red chili pepper flakes
  • 1 tsp sesame oil
  • 20 to 30 square wonton wrappers
  • 1 tsp sea salt and white pepper, for the filling
  • 4 cups chicken broth (or mushroom stock)
  • 1/8 cup ginger, grated, for garnish
  • 1 tsp tamari or low-sodium soy sauce, for the broth
  • 1 tbsp garlic cloves, minced, for the broth
  • 1/4 tsp sesame oil, for the broth
  • 1 to 2 tbsp green onions, for garnish

Steps

  1. In a large bowl, mix pork, soy sauce, chives, vinegar, cornstarch, ginger, garlic, chili flakes, and sesame oil until fully combined. Add salt and pepper.
  2. Wet the edges of a wonton wrapper with water. Place half a tablespoon of filling in the center. Fold diagonally into a triangle and seal the edges, then fold the two identical corners in on each other and press to seal. Repeat until all wrappers are filled.
  3. Bring the soup ingredients to a low boil. Simmer for 10 minutes, remove the ginger and garlic, then bring back to a boil. Add the wontons and cook for 10 minutes more.
  4. Serve into bowls and garnish with green onions.
