Yukon Moose Stew

Game meat can be a delicacy, and when properly cooked can be one of the most flavourful dishes to prepare. Our Canadian style provides great nutritional energy on those cold winter nights.

Ingredients

  • 1 lb Canadian moose meat, cubed
  • 1 tbsp avocado oil
  • 2 cups beef broth
  • 1 tbsp lime juice
  • 1 whole bay leaf, not crushed
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried rosemary
  • 1 tsp dried parsley
  • 1 tbsp garlic, minced
  • 1 tsp crushed white peppercorn
  • 4 large red potatoes, chopped
  • 1 to 2 carrots, not peeled, sliced and quartered
  • 1 to 2 celery stalks, diced
  • 1 small shallot, finely diced
  • 1 tsp tapioca starch, dissolved in cold water
  • 1 tbsp fresh basil, for garnish

Steps

  1. In a large pot, cook the moose meat in avocado oil until browned. Save the juice from the meat.
  2. Add beef broth, lime juice, bay leaf, Worcestershire sauce, rosemary, parsley, garlic, and pepper. Simmer on low for 5 minutes.
  3. Bring to a slow rolling boil for 10 minutes, then reduce heat, cover, and simmer on low for 45 minutes.
  4. Add potatoes, carrots, celery, and shallots. Bring to a slow boil for a few minutes. Dissolve the tapioca starch in cold water and add slowly, stirring gently, then cover for 30 minutes or more if needed, checking and stirring as needed.
