Caesar salad was created in Tijuana, Mexico, by restaurateur Caesar Cardini; this is a modern home-style dressing for it.
Fun Fact
Anchovies dissolve into dressings more completely than their reputation suggests. The result tastes savoury, not like somebody hid a whole fish in your lettuce.
Ingredients
- 2 tbsp minced garlic
- 1 tbsp Dijon mustard
- 1 tbsp vinegar
- 2 tbsp mayonnaise
- ยฝ cup olive oil
- Lemon juice, to taste
- Anchovy fillets, optional
Steps
- Whisk garlic, Dijon, vinegar, mayonnaise and lemon juice together.
- Slowly whisk in olive oil until emulsified.
- Add minced anchovy if using and season to taste.
Notes
Taste before the final adjustment. A recipe should guide dinner, not bully it. If it needs a little more acid, sweetness, salt or heat, make the change in small steps instead of launching the whole spice rack into orbit.

Storage
