This is my canadian-leaning version, built around the ingredients and method that give the recipe its character.

Fun Fact

Aroma changes how strongly we perceive flavour, which is why herbs, citrus peel and warm spices can make a simple recipe taste far more complicated than the effort involved.

Ingredients

  • 1 lb ground chicken or turkey
  • ¼ cup almond flour
  • 2 oz cream cheese
  • 1 egg
  • 2 tbsp chopped celery
  • 3 tbsp blue cheese
  • ¼ tsp black pepper
  • 4 oz butter
  • ½ cup hot sauce

Steps

  1. Preheat oven to 350°F (175°C). Combine meatball ingredients without adding extra salt.
  2. Form 1-inch meatballs and bake 10 minutes.
  3. Melt butter with hot sauce. Carefully coat the partially cooked meatballs.
  4. Return to the oven for about 12 minutes more, until safely cooked through.

Notes

Use ordinary hot sauce for a sane version. Extreme pepper sauces can cause painful skin and eye exposure, so wear gloves and do not turn dinner into a dare unless everyone involved actually agreed to the dare.
