Origin

This is my greek-leaning version, built around the ingredients and method that give the recipe its character.

Fun Fact

Stuffing chicken increases thickness, so an instant-read thermometer is far more trustworthy than judging by the outside colour.

Ingredients

  • 3 chicken breasts
  • 8 oz chopped spinach
  • 3 oz feta
  • 4 oz cream cheese
  • 1 clove garlic
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1 tbsp olive oil

Steps

  1. Preheat oven to 450°F (230°C). Mix spinach, feta, cream cheese, garlic and half the salt.
  2. Cut a deep pocket into each chicken breast and fill with the spinach-cheese mixture. Season outside with remaining salt and pepper.
  3. Sear stuffed chicken in olive oil about 5 minutes on the first side, then flip.
  4. Transfer the pan to the oven and bake about 10–15 minutes, until safely cooked through.

Notes

Taste before the final adjustment. A recipe should guide dinner, not bully it. If it needs a little more acid, sweetness, salt or heat, make the change in small steps instead of launching the whole spice rack into orbit.
