Hot & Sour Vegetable
"Hot & Sour" soups are great for many occasions and are flavourful without being heavy or thick. The sourness provides a wonderful kick of heat with the hotness of chili peppers. Great for when you're sick or in the mood for something on those cold days.
Ingredients
- 1 tbsp olive oil (or canola)
- 1 tbsp fresh ginger, grated
- 4 stalks green onions, chopped
- 1/4 red cabbage, finely chopped
- 3 carrots, thinly julienned
- 8 oz cremini mushrooms, sliced
- 5 to 6 cups vegetable broth
- 1/2 tsp soy sauce, to taste
- 1/2 tsp white pepper
- 2 tbsp rice vinegar
- 1 tbsp chili garlic sauce, plus more to taste
- 10 oz firm tofu, cubed
Steps
- Thinly slice the cabbage, mushrooms, and green onions. Slice the carrots into thin julienne pieces.
- Add the oil, ginger, and green onions to a large pot.
- Sauté the ginger and onion over medium heat until soft. Add the vegetable broth, soy sauce, vinegar, and chili garlic sauce. Start with a small amount of each, then adjust to taste. The broth should be tangy and spicy. Bring to a low boil for 5 minutes.
- Drain the tofu and cut into small cubes. Add to the hot broth and heat through, 1 to 2 minutes.
- Add the sliced vegetables to the soup and cook until softened. Garnish with sliced green onions and more chili garlic sauce if desired.
