Savoury Cucumber Cream-Cheese Bites
Cool cucumber rounds filled with a dill, ranch and cream-cheese topping. They look fancy enough for company but require considerably less ceremony than the average canapé. In other words, you can make them without owning tweezers, microgreens or a chef who answers only to Pierre.
What It Is
Thick cucumber slices are partially hollowed out and filled with a creamy ranch-and-dill mixture, then finished with pepper and paprika. They are crisp, cool and rich without being heavy, and they work especially well as a make-ahead cold appetizer.
Origin
There is no single documented origin for cream-cheese-filled cucumber bites. They belong to the broad family of modern cold canapés and party appetizers. This version comes from the Dinner by the Minute collection.
Fun Fact
Cucumbers are roughly 95% water, which is why they are crisp and refreshing and also why patting the cut surface dry helps a creamy filling stay where you put it.
Ingredients
- 2 large cucumbers
- 4 oz cream cheese, softened
- 1 tbsp mayonnaise
- 3 tbsp light ranch dressing
- 1 tbsp fresh dill
- ½ tsp minced garlic
- Black pepper, for garnish
- Paprika, for garnish
- Optional: cayenne or hot sauce
Steps
- Wash and peel the cucumbers, then slice into ½-inch rounds. Use a small measuring spoon to scoop out a shallow hollow in the centre of each slice without cutting through the bottom.
- Combine the softened cream cheese, mayonnaise and ranch dressing until smooth. Mix in the dill and minced garlic.
- Pat the cucumber surfaces dry if needed. Transfer the filling to a piping bag fitted with a star tip and pipe roughly ¾ tbsp into each cucumber round.
- Sprinkle with black pepper and paprika. Refrigerate until ready to serve.
Notes
The original recipe says these can be prepared several hours before serving and should remain refrigerated. The old note referring to 'this layer dip' was clearly a copy-and-paste refugee and has been corrected here.
Substitutions
Use Greek yogurt or light cream cheese for a lighter filling, dairy-free cream cheese for a dairy-free version, or sour cream for extra tang. Add cayenne, chili flakes or hot sauce for heat. Fresh chives, parsley or mint can stand in for dill.
Storage
Keep covered in the refrigerator and serve within 24 hours for the best texture. They remain safe longer when properly chilled, but cucumbers gradually surrender to physics and release water.
Freezing
Do not freeze. Cucumbers become soft and watery after thawing, while the cream-cheese filling may separate. The freezer wins this round.
