Fun Fact

Kiwi contains actinidin, a protein-digesting enzyme also responsible for kiwi’s ability to tenderize some foods.

Ingredients

  • ¾ cup monk-fruit sweetener
  • 6 kiwis
  • 2 cups lemon juice
  • 1 cup water
  • 1 litre seltzer water

Steps

  1. Purée the kiwi and sweetener until smooth.
  2. Stir together lemon juice and water, then add the kiwi purée and chill thoroughly.
  3. Pour about ½ cup kiwi mixture into each glass, add ice and top with seltzer.

Notes

Taste before the final adjustment. A recipe should guide dinner, not bully it. If it needs a little more acid, sweetness, salt or heat, make the change in small steps instead of launching the whole spice rack into orbit.

Storage

Freezing

Freeze still fruit bases or concentrates if useful, but add carbonation after thawing. Dairy-heavy drinks are better made fresh.
